Buttercup Squash Soup with Ginger and Turmeric

This easy-to-prepare soup is one of my favorite. Butternut squash delivers an ample dose of dietary fiber, making it an exceptionally heart-friendly choice. It provides significant amounts of Vitamin A, potassium, important for bone health, and vitamin B6, essential for the proper functioning of both the nervous and immune systems. Turmeric is a powerful anti-inflammatory and is a very strong antioxidant. Ginger is among the healthiest (and most delicious) spices on the planet. It is loaded with nutrients and bioactive compounds that have powerful benefits for your body and brain.

 

INGREDIENTS

 

2 butternut squash (about 4 3/4 pounds total), halved lengthwise, seeds and fibrous middle removed 

2 tablespoons of coconut oil

2 cups thinly sliced onion

1 small potato, peeled and quartered

2 teaspoons minced fresh ginger

2 tsp. of turmeric powder

2 garlic cloves, coarsely chopped

Salt and ground black pepper to taste

5 cups (or more) of homemade bone broth or vegetable stock or organic low-salt chicken broth

Chopped fresh parsley or cilantro

PREPARATION

Preheat oven to 375°F. Line a large baking sheet with parchment paper. Place squash, cut side down, on a baking sheet. Bake until squash is very soft, about 50 minutes. Using a paring knife, remove peel from squash; discard peel. Cut squash into 2-inch pieces. Heat oil in a heavy large pot over medium-low heat. Mix in onion, potato, ginger, garlic and turmeric. Cover pot and cook until onions are tender, about 15 minutes. Add squash and 5 cups of broth. Bring to boil. Reduce heat to medium-low. Cover and simmer 10 minutes.

Working in batches, purée soup in a blender. Return soup to pot. Season soup with salt and pepper. Bring to simmer, thinning soup with more broth if necessary. Ladle into bowls. Sprinkle with parsley and serve.
