Apple Zucchini Flax Muffins

Ingredients:

  • 1 cup of flax seed meal
  • 3 scoop of whey protein (any flavour), sweetened with Stevia
  • 2 tablespoon of almond flour
  • 1 tablespoon of baking powder
  • 1 tablespoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon of ground ginger
  • 1/2 teaspoon of sea salt
  • Stevia sweetener equal to 1/4 to 1/2 cup of sugar
  • 1 tablespoon of organic blackstrap molasses
  • 4 large eggs, beaten
  • 1/2 cup coconut oil or 1/2 cup of melted butter
  • 1/4 cup of cream
  • 1/4 cup of almond milk
  • 1  tablespoon vanilla
  • 1/2 cup of shredded apple
  • 1/2 cup of shredded zucchini or 1/2 cup of carrots
  • 1/2 cup chopped pecans (optional)

Preparation:

  1. Preheat oven to 350 F. Grease a 12-muffin  tin very well or line muffin cups with paper liners. Spray liners with olive  spray.
  2. Combine all dry ingredients.  Whip up eggs together with the rest of the liquid.
  3. Let batter stand 10 minutes.  If you wish you can sprinkle top of muffins with sunflower seeds and cinnamon.
  4. Divide mixture into lined muffin tins.
  5. Bake for about 18 minutes until toothpick comes out clean.
