Chocolate Chia Pudding

Written by

This Chocolate Chia Pudding has only six ingredients –chia seeds, cacao powder, coconut milk, vanilla stevia, water, and salt.  Despite their tiny size, chia seeds are among the most nutritious foods on the planet. They are loaded with fiber, protein, Omega-3 fatty acids and various micronutrients.

This recipe uses stevia rather than maple syrup or honey to cut down on sugar. If you are not a fan of stevia feel free to use maple syrup or honey instead. And for cool, nostalgic look to the dinner table, scoop your pudding in tiny mason jars. Their small size, also pack well in lunches.

1 (13.5 ounce) can coconut milk, blended

1 cup water

¼ cup chia seeds

2 tablespoon cacao powder

⅛ teaspoon vanilla stevia or vanilla extract and stevia

⅛ teaspoon sea salt

Combine blended coconut milk, water, and chia seeds in a jar and shake well

Add cacao powder, stevia, and salt and shake well

Refrigerate overnight to let chia seeds soften and absorb liquid

Note: For this recipe, it is important to blend the coconut milk prior to combining it with the other ingredients. This way you will have a smooth and creamy pudding, rather than one with little lumps of coconut milk in it.

If you don't like the look of the chia seed you can blend the pudding. Simply put all the ingredients in a high speed blender and blend until smooth.
