Pasta with Marinara Sauce

A nutritious pasta that's a great alternative for children!

Why it’s so good for you:

The health benefits of peppers include relief from cancer, peptic ulcer, menopausal problems, low risk of cardiovascular disease and diabetes. It has anti-inflammatory, analgesic properties and may also provide relief of pain related to arthritis. It also provides relief from fibromyalgia, skin aging and psoriasis.


(use organic ingredients where possible)

For you pasta:

1 small zucchini, (one zucchini per person) shredded or made into noodles by a spiralizer (set aside)

8 black or green olives

Handful fresh basil leaves

For your marinara sauce 


1 red pepper, chopped roughly

1 tsp honey

1/2 cup soaked (overnight) cashews, rinsed well

1 tbsp lime juice

1 fresh tomato, chopped

1/4 onion, chopped roughly

1-2 tbsp olive oil

1 garlic glove

Salt and pepper


Make beautiful noodles with your spiralizer. One small zucchini will feed one adult.

Finely chop the fresh basil leaves and set aside.

In your blender, blend your soaked cashews into a cream like texture.

Add all other ingredients to make your tomato sauce and mix until completely smooth.

Mix this through the pasta, then sprinkle with olives and basil leaves.
